Über Kartoffeln
Nach Getreide die weltweit meistproduzierte stärkehaltige Nutzpflanze, gegessen frisch oder verarbeitet zu Pommes, Chips und Stärke, auch als Tierfutter genutzt. China und Indien sind mit Abstand die größten Produzenten, wobei das meiste davon im Inland verbraucht statt exportiert wird — Kartoffeln sind sperrig und verderblich, weshalb der internationale Handel (und damit ein einzelner Weltpreis) viel geringer ausfällt als bei Getreide. Das Krankheitsrisiko ist für ein Grundnahrungsmittel ungewöhnlich hoch: Die Kraut- und Knollenfäule, der pilzähnliche Erreger hinter der irischen Hungersnot der 1840er, ist bis heute eine reale Bedrohung, gegen die Anbauer jede Saison mit Fungiziden und resistenten Sorten vorgehen. Was heute tatsächlich grenzüberschreitend gehandelt wird, sind meist tiefgefrorene Pommes oder Trockenflocken statt roher Knollen.
