À propos de la pomme de terre

La culture vivrière féculente la plus produite au monde après les céréales, consommée fraîche ou transformée en frites, chips et amidon, et aussi utilisée comme alimentation animale. La Chine et l'Inde en sont de loin les plus grands producteurs, bien que la majeure partie de cette offre soit consommée localement plutôt qu'exportée — les pommes de terre sont volumineuses et périssables, si bien que le commerce international (et donc un prix mondial unique) est bien plus restreint que pour les céréales. Le risque de maladie est inhabituellement élevé pour une culture vivrière de base : le mildiou de la pomme de terre, le pathogène ressemblant à un champignon à l'origine de la famine irlandaise des années 1840, reste une menace active que les producteurs gèrent chaque saison avec des fongicides et des variétés résistantes. Ce qui traverse aujourd'hui les frontières circule surtout sous forme de frites surgelées ou de flocons déshydratés, plutôt que de tubercules bruts.
