Sobre la patata
El cultivo alimenticio con almidón más producido del mundo después de los cereales, consumido fresco o procesado en patatas fritas, chips y almidón, y también usado como alimento animal. China e India son, con diferencia, los mayores productores, aunque la mayor parte de esa oferta se consume internamente en lugar de exportarse — las patatas son voluminosas y perecederas, por lo que el comercio internacional (y por tanto un único precio mundial) es mucho menor que en los cereales. El riesgo de enfermedad es inusualmente alto para un cultivo básico: el tizón de la patata, el patógeno similar a un hongo detrás de la hambruna irlandesa de la década de 1840, sigue siendo una amenaza activa que los productores controlan con fungicidas y variedades resistentes cada temporada. La mayor parte de lo que hoy cruza fronteras se mueve como patatas fritas congeladas o copos deshidratados, no como tubérculos crudos.
