About Cheese

Tracked here via the EU Commission's weekly reference price for Edam, one of several cheese varieties it publishes and the one with the widest reporting across member states - not a claim that Edam represents the cheese market as a whole, any more than this site's single wheat or coffee benchmark represents every grade traded. Cheese demand is comparatively stable and slow-moving year to year, so its price mostly reflects the same underlying raw-milk cost pressures as butter and milk powder rather than demand shocks of its own.
