About Groundnuts (Peanuts)

A legume grown for direct food use (roasted, peanut butter) and crushed into groundnut oil. China, India and Nigeria are the largest producers, though most of the crop is consumed domestically rather than traded internationally. Aflatoxin - a toxin produced by mold that thrives in poorly stored, humid conditions - is a persistent food-safety and trade issue for groundnuts specifically, and export shipments are routinely tested for it, which can restrict which origins buyers are willing to source from.
